Russian Cuisine

Certain Russian drinks and dishes have acquired world wide recognition: vodka, meat dishes such as beef a la Stroganoff, as well as caviar appetizers. During your visit, however, you will be able to sample a much wider range of traditional Russian dishes and will probably become very comfortable with such terms as ukha (fish soup), shchi (cabbage soup), bliny (pancakes), pelmeni (dumplings), etc. To prepare you for this culinary adventure, here are some simple traditional Russian recipes:

Original "Blinchikis" (Original Pancakes):
  - 9 ounces of flour,
  - 2 1/2 glasses of milk,
  - 3 eggs,
  - 2 table spoons of butter
(soft – at room temperature),
  - 1 tea spoon of sugar,
  - 1/4 teaspoon of salt.
Mix 3 egg yolks and 1/2 glass of milk. Then gradually add salt, sugar, and flour. Mix well and add butter. Mix again, and now add remaining milk, as well as previously whipped egg whites. Cook "blinchikis" on a large round skillet (make sure it is greased and hot). When done, fold each "blinchik" twice while still on the skillet, then move onto a plate and serve with sour cream, honey or jam.

Russian Salad:
  - 4 ounces of cooked meat,
  - 10 ounces of diced cucumbers,
  - 4 ounces of shredded chives,
  - 2 table spoons of chopped parsley,
  - 2 table spoons of chopped dill,
  - 3 hard boiled and chopped eggs,
  - 1 glass of mayonnaise,
  - 1/4 teaspoon of salt.
Combine chives, dill, parsley and cucumbers. Mix well, then add salt. Set aside for some 10-15 min., then add remaining ingredients, mix well, sprinkle with some chopped parsley and serve.
